Ein kurzer TV-Auftritt des damals 12-jährigen französischen Gitarristen Bireli Lagrene wird zur Initialzündung für den ein Jahr jüngeren Jörg Seidel. "Das will ich auch machen"...dieser Satz war und ist bis heute Ansporn für den junggebliebenen und dynamischen Musiker, den die Musik nach diesem Erweckungserlebnis nie wieder losgelassen hat.
Jede freie Minute verbringt der Teenager ab da mit seiner Gitarre, hört die Musik der Vorbilder Django Reinhardt, Häns´che Weiss, Titi Winterstein und natürlich Bireli Lagrene, der ihn knapp 20 später in
einem seiner Konzerte auf die Bühne holt. Und er übt und übt und übt...
Es ist die Musik der Sinti, der pulsierende Swing der akustischen und europäisch geprägten Jazzmusik, die Seidel begeistert und ihn dann früh mit den großen Vertretern der deutschen Szene in Kontakt kommen lässt.
Anfang der 90er Jahre wendet sich Seidel der Musik Nat King Cole´s zu. Er gründet ein mit Gitarre, Piano (Joe Dinkelbach) und Kontrabass (Gerold Donker) besetztes Trio, das dem Klangideal des Cole-Trios folgt. Noch immer spielt das Trio in dieser Besetzung und hat bislang vier CDs veröffentlicht. Und auch, als seine musikalischen Vorbilder sich verändern - es werden die Gitarristen der 50er und 60er Jahre: Tal Farlow, Jimmy Raney, Wes Montgomery, George Benson - bleibt der "Gipsy Swing" noch das musikalische Ideal. Ab 1993 spielt Jörg Seidel im Quartett des renommierten und früh verstorbenen Geigers Wedeli Köhler und nimmt die CD "My melancholy Baby" auf.
1995 erscheint die erste CD unter Seidel´s Namen, eine erste musikalische Visitenkarte, auf der sich Jörg Seidel mit unterschiedlichen Besetzungen vorstellt.
Dann geht es Schlag auf Schlag: Seidel beginnt Ende der 90er Jahre eine intensive Zusammenarbeit mit der Jazz-Legende Bill Ramsey. Zahlreiche große Konzerte folgen. Weitere Gäste seines Trio´s werden dann die große Swing-Diva Greetje Kauffeld und die beiden fantastischen Sängerinnen Silvia Droste und Ines Reiger (Wien). Ab 1996 startet seine Zusammenarbeit mit dem bekannten Jazzgeiger Martin Weiss, aus der ebenfalls eine CD
hervorgeht.
Jörg Seidel erweitert seine Aktivitäten und wird ein gefragter Dozent für Gitarre wie für Gesang. Er wird ab 2000 Gesangsdozent für Jazzkurse im niederösterreichischen Zeillern, wo er mit Ines Reiger, dann Agnes Heginger und später Monika Ballwein bis 2015 unterrichtet. Er arbeitet als Dozent an der Jazzhochschule in Bremen, gibt Masterclasses an verschiedenen Konservatorien, Musikschulen und für freie Träger (u.a. in Wien, Klagenfurt, Plochingen, Aidlingen).
Im Jahr 2006 lernt Jörg Seidel den Schauspieler und Sänger Ron Williams kennen. Beide entwickeln die Idee, ein klassisches Soulprogramm mit dem kammermusikalischen Trio Seidel´s auf die Bühen zu bringen....es wird ein bis heute anhaltender großer Erfolg. "Jazzin´ Up The Soul" begeistert in immer ausverkauften Konzerten ein großes und frenetisch jubelndes Publikum. Das Quartett konzertiert im Rahmen großer Festivals und in Theatern. Ab 2012 wendet sich Seidel neuen Themen zu: Er nimmt in Wien eine CD als Hommage an den großen Entertainer Bing Crosby auf und befasst sich seit 2014 intensiv mit der Musik Udo Jürgens´.

Neben seiner musikalischen Tätigkeit hat Jörg Seidel mehr als 20 Jahre lang auch als Veranstalter von zahllosen Jazzkonzerten in seiner
Heimatstadt gewirkt. Mit dieser Erfahrung tritt er seit vielen Jahren auch als Berater kleiner Festivals und Konzertreihen auf. So u.a. für "Bremen Swingt" (2007), "Sparkassen Jazztage Aurich" (2007) und für die "Jazztage Borkum" (seit 2016). Er hat 16 Jahre lang im Rahmen der Gesangskurse im Schloss Zeillern (A) mit Ines Reiger, Agnes Heginger und Monika Ballwein unterrichtet und
arbeitet als Workshop-Dozent für Gitarre und/oder Gesang.
